Lean and Green Meal Idea: Boca Burgers and Bleu Slaw

My husband is a genius.  At least once a week he comes up with a brand new (and always fabulous) recipe for our Lean and Greens.  We love Boca Burgers and enjoy them in a lettuce wrap with steamed veggies.  Well one night he decided he wanted something different...and Bleu Slaw was born!

I didn't get a picture of all of the ingredients together, so I'll just go through them individually, sorry!

 Slice up a head of cabbage (or however much you're going to use) very thin - this particular slaw was a big one!  You could also buy the bags of shredded cabbage.

Dice up some red onion 

Throw in a small handful of sprouts and mix everything together.

 Here's the sauce magic: Regular Blue (Bleu) Cheese Dressing and Walden Farms Bleu Cheese Dressing ( see below).

Mix sauce into cabbage mixture and stir until fully incorporated. 

Now for the "lean": Boca Burgers baby!

Fry your burgers in some PAM (according to box)


Buy some good pico or make your own (this isn't exactly what I would consider good pico, but it was decent).

 This is how Mr. Charming likes his: Burgers on the side, slaw with pico on top

And this is how I like mine - one big Boca Burger Bleu Slaw Salad!  YUUUUUMMMY! 

I would never have thought to use bleu cheese, but let me tell ya, IT WORKS!  This is super, super good and goes so well with the Boca and pico.  We have also eaten the slaw with baked chicken and pulled pork - all were yummy!

Bleu Slaw
5 cups Cabbage, shredded
1/3 cup Red Onion (you can add more or less to taste - we probably use a little less)
1/4 cup Sprouts

Sauce:
3 Tbl Bleu Cheese Dressing
4 Tbl Walden Farms Bleu Cheese Dressing to consistency (just use enough that it coats everything nicely, but isn't runny)

Mix all ingredients together and serve immediately.  You can make this ahead of time and keep it in the fridge, but I would use less dressing, because it will get kinda soupy - still good though!

This looks really good. A couple questions since I'm still trying to figure everything out. How much of the salad do you eat? Does the dressing count as your condiment? :)

@Mary - Sorry I didn't get back to you sooner! We do 1.5 cups of the salad (it A LOT). And the dressing counts towards condiments (Walden Farms stuff) AND healthy fat serving (regular dressing).

Hi there! Just curious about your portion sizes. 5 cups of cabbage and onions? 7 tablespoon of salad dressing? I notice this doesn't fall within the requirements for TSFL. Are you in maintenance mode?
