#photoaday Challenge, Day 2: Breakfast

This was my photo submission for Day 2 of the #photoaday challenge.  The recipe is below.

 And this is what I had for breakfast - I adore my Dutch Chocolate shakes in the morning!  So. Good!

Chili Browns
 I love the bags of shredded, frozen potatoes - fast and easy!  We spray ours with PAM and season with a little salt and pepper, then bake in the oven (450 degrees) until brown and crispy (about 20-30 minutes).  

Place a small portion on your plate.
 Then top with a fried egg (we use PAM to fry them).

 Sprinkle a little cheese on (any kind is good - this is sharp cheddar).

 Add some diced green chilies...

 I love green chilies!!

 And some salsa...pico de gallo if you have it!

Ready for the kicker (in the ticker)?  
 Top with a spoonful of country gravy (recipe below).  You could use the prepackaged mix, but then we couldn't be friends.  Friends don't let friends eat crappy gravy. The end.

Viola!  That is a Chili Brown...they are so good and super filling!

Homemade Country Gravy
4 Tbl butter
4 Tbl flour
salt and pepper to taste

Melt butter in a pot on medium heat, then add the flour.  Incorporate them together and let them warm through, stirring constantly with a whisk - this just helps the flour breakdown and mix well with the butter.  You don't have to brown it, but you can (just a little bit), for a deeper flavor.

Add:
1 can evaporated milk (NOT sweet and condensed milk - trust me, it will ruin your day)
1 cup (+/-) milk (or to consistency)

Whisk all ingredients together and continue stirring until it begins to thicken.  You can thin it out with more milk if necessary.  Take it off the heat when it's about where you want it.  It will continue to thicken as it cools down.
