Cilantro Lime Shrimp with Green Beans

Here's another great Lean & Green recipe. This shrimp was divine and the flavors were amazing. It's a must try! Check it out and let me know what you think. Enjoy!

Cilantro Lime Shrimp & Green Beans
Servings: 4 • Serving Size: 6 oz shrimp & 1-1/2 cups green beans
Calories: 257.3 • Fat: 5.1g  Protein: 35.9 g  Carb: 17.4 g  Fiber: 4.1 g

Ingredients:
  • 2 tsp olive oil
  • 2 lb shrimp, shelled and deviened
  • 6 cloves garlic, crushed
  • 1/3 cup chopped fresh cilantro
  • 1 lime
  • salt and pepper
  • 6 cups green beans

Directions:

Heat a large frying pan on medium-high heat. Add oil to the pan, when hot add shrimp. Season with salt and pepper. When the shrimp is cooked on one side, about 2 minutes, turn over and add garlic. Saute another minute or two until shrimp is cooked, careful not to overcook. Remove from heat. Squeeze lime all over shrimp and toss with cilantro. Serve hot.

In a separate pan, add 6 cups green beans, crushed garlic to taste, and season with salt and pepper. Cook on medium high for 2 minutes. Add 1/2 cup water and cover, cook for an additional 8 minutes. Uncover and cook until water evaporates. Serve hot on the side of shrimp.

this recipe is pretty good! the shrimp are delicious! I'd recommend a bit more seasoning for the green beans, though... maybe a bit of butter and a dash of red pepper flakes for some spice? I had mine with some cous cous... deelish!

I made this for my honey and my best friend, and they absolutely loved it. It was some of the best shrimp that I've had in a very long time.

I made this for dinner last night, and it was great! My toddler loved it, too. Lots of flavor with only a few ingredients. Perfect for a busy weeknight :) The only change I made was to add a little olive oil to the pan before cooking the green beans. YUM!

Can anyone tell me a good ratio of garlic to green beans? Even better if you know the right amount per cup (as I probably won't make all 6 cups of beans at once).
The frozen green beans we have don't taste very good plain, and every time I try to season them with butter &/or salt I mess them up....so specifics would be so helpful for me. Thank you!

Just a suggestion, perhaps if you'd like to make the most of the flavour, cook it all in one pan - put the green beans or whatever green vege you choose to the side while the rest is cooking and it can cook from the steam. Flavoursome!

Hi, I have a question please. Did anybody that cook this already, use fresh green beans or frozen? Thank you in advance.

I used frozen green beans, the long cut ones, that look a little more 'fresh' than the stumpy chopped ones that come in cheap, frozen veggie mixes.

Thank you Krystal.

OK i tried it but it tasted .. bland but i think that was my fault. I used garlic powder instead of the real think, so in my opinion dont substitute! Will try again, but this time with real garlic.

This was delicious! I used garlic powered cause i didn't have actual cloves but I was generous with it since it was in powder form. Still turned out great. Its a great addition to my new diet. Simple amount of ingredients and quick to make. Thanks.
