Chinese Chicken Salad


Hey guys here's another great Lean & Green recipe to add to the collection. The Asian flavors are amazing and would be perfect for a warm summer evening. This quick and easy recipe will be one the whole family will enjoy.
Dressing:
1/4 cup rice vinegar
1 Tbsp zero calorie sugar substitute
3 Tbsp light soy sauce
1 Tbsp olive oil
1 tsp sesame oil

Salad:
1 pkg (14-16 oz) salad greens or shredded cabbage
20 oz chopped or shredded, cooked chicken
2 tsp fresh chives
1 large can mandarin oranges, drained (omit while on the 5 & 1 plan, can substitute dried orange zest or fresh ginger root)
1/2 cup slivered or chopped toasted almonds (omit while on the 5 & 1 plan)

Directions:
In a small bowl, whisk all ingredients for dressing together.  Set aside.
In a large bowl, mix all ingredients for salad together,
Drizzle dressing over salad and toss.
